Vegan Hakka Noodles

Hakka Noodles , need I say more? An Indo-chinese fast food that we cannot get enough of!



This hakka noodles recipe is loaded in vitamins & minerals from the vegetables! We have made this recipe wholesome by using whole grain hakka noodles and sodium reduced soy sauce.

Ingredients

1 Packet Hakka Noodles whole wheat

1 Tsp finely chopped garlic

1 Tsp finely chopped ginger

2 Tsp Sodium Reduced Soy Sauce

2 Tsp Chilly Sauce

1/2 Cup onion slices

1/2 Cup cabbage shredded

1/2 Cup carrots cut into long slices

1/2 French Beans cut lengthwise

1/2 Spring Onion for garnishing


Procedure:

1. In a large pot on medium heat , boil the hakka noodles in water. Add 2 Tsp vegetable oil and salt (optional). Remove when the noodles are about 90% done.


Tip: Drain the water when the noodles are about 90% done & rinse with cold water. This is done to prevent over cooking the noodles.

2. Heat 1 tsp oil in a wok. After the oil gets hot, add ginger, garlic & saute for 1 minute.


3. Add the onion slices & saute for 2 mins.


4. Add the veggies (except for the green peppers/ capsicum) & saute on high heat. Add the green peppers the last.


Tip: Adding green peppers last helps to keep them crunchy . The high heat also helps to keep the other veggies crunchy, Make sure to stir to prevent burning.


5. Add salt, add the boiled noodles and toss them.


6. Add the soy sauce, chilly sauce, and toss the noodles lightly again


7. Garnish with chopped spring onions . Serve Hot!
