Curried Chickpeas - Chole

Chole or Curried Chickpeas is a favourite with young and adults alike ! This is a vegan , protein packed dish with whole spices will fill your kitchen with a wonderful zesty fragrance.

Recipe
Serves 4
Time: ~30 minutes
Ingredients:
2 Tea bags
2 Cups chole soaked overnight
2 Big medium sized onions
1 Finely chopped Tomato
2 Tsp ginger garlic paste
2 Tsp Chole Masala
5 Cloves
2 Small cardamom sticks
10 Slack pepper kernels
1 Bay Leaf
2 Tsp red chilli powder
Procedure:
1. Put the soaked chickpeas, 2 Tea Bags in the Pressure cooker for 3 whistles or till cooked. The proportion of water to chickpeas is 1:1.
Tip: Soaking the chickpeas overnight makes its easier for the chickpeas to cook. Soaking makes them soft & supple . If you prefer to use canned chickpeas, that's perfectly fine! Make sure to rinse the canned chickpeas before you. Adding tea bags is an optional step. Though it may not do much for your taste buds, it will make the chole visually appealing by giving it rich dark brown color.
2. In a shallow pot on medium heat, add oil, cloves, pepper, cardamom sticks, Bay leaf, onion. The aroma from the whole spices will soon fill your kitchen!
4. Cook the onions till the turn bro. Now add the ginger garlic paste & cook till you smell the aroma from the ginger garlic paste. This should take around 3 to 4 mins.
5. Add splashes of water to prevent burning while stirring occasionally
6. Once done, set aside to cool. After cooling ,grind this mixture and set aside .
Tip: You may add 2-3 Tsp of water to make it easier to grind. However, do not add too much water.
7. In the same pot, add 2 Tsp of oil and add the onion paste, finely chopped tomatoes and saute on a medium to low flame till the fat separates from tomatoes.
Tip: A food processor can be used to finely mince the onions & tomatoes instead of hopping the onions & tomatoes to speed up the cooking time. Skip step 6 if you do so.
10. Now ddd the cooked chole to this mixture and mix. Add water as required.
11. Add salt to taste. Add chole masala & red chilli powder
13. Saute for 5 to 6 minutes and bring to a boil. Turn off the stove at this point.
15. Garnish with chopped coriander
16. Serve with aromatic basmati rice or some yummy garlic naan!
