Vegan Coconut Peas Curry

Delicious 15 minutes, 1 pot vegan coconut peas curry. This dish is high in protein, iron and fiber.
We have all those days where we too tired, bored or lazy to cook after a long day at work. This recipe is a perfect dish for anyone who wants an instant, wholesome and healthy meal with 15 minutes.

Servings: 4
Recipe
Ingredients:
2 Tsp vegetable oil
2 Tsp mustard seeds
1 Bundle of coriander/ Cilantro leaves
1 Tsp of ginger garlic paste or 6 cloves or garlic about 1 in ginger piece
1/2 cup fresh or frozen coconut
5 Cups of fresh peas or 1 packet of froze peas
6 Curry leaves
4 Green chillies or as needed
6 Cups of water
Procedure:
1. In a blender add the coriander leaves, ginger garlic paste, green chilies and coconut.
Tip: If using frozen coconut, microwave the coconut in a microwave safe dish for 30 seconds or till it thaws.
2. In a shallow pan on high heat, add 2 Tsp vegetable oil
3. Reduce the heat when the oil heats up
4. Add the mustard seeds, curry leaves
Tip: Wait till the mustards seeds sizzle. If they do not sizzle wait turn the stove on high till they sizzle. Cut/ tear the curry leaves to release their aromatic flavour.
5. Add the blended mixture to the the pan
6. Heat for 5 minutes, till the mixture turns aromatic adding splashes of water to prevent burning and stirring occasionally
7. Add the peas with about 6 cups of water
Tip: If using frozen peas, heat in a microwave safe bowl for 2-3 minutes to thaw
8. Cover and cook for 10 minutes
9. Add salt and sugar to taste
Tip: Adding a pinch of sugar to savoury dishes enhances the spicy and bold flavours of the dish
10. Pour the wonder green curry into a bowl, garnish it with some grated coconut.
