Undhiyo




#Undhiyo is a winter special gujarati delight traditionally eaten with rice. It has the wholesome goodness of a plethora of #vegetables - green beans, unripe bananas, egg plants, muthia, yam, etc. The gravy is made with grated coconut, ginger, garlic, green chillies.


Serves: 6


This recipe is a labor of love & we've broken it down into 4 prep stages:


1) Prepare the #methimuthias:

Ingredients:

1 tsp Red chilli powder

2 tsp Coriander powder

2 tsp Cumin powder

1 Cup Chickpea powder of besan

2 Cups whole wheat flour - 'ata'

1 tsp hing

2 Cups chopped methi


Method:

To the chopped methi add the 'ata' & besan.

Add salt, sugar, goda masala, jeera powder, coriander powder, red chilli powder & hing.

Add 2 tsp oil and knead into a tight dough.

Steam the dough in a steamer and when done cut into 1" pieces.


| Tip: To made the muthias extra crunchy - fry them in oil they are golden & crispy from the outside. Though, if you prefer not to, you can always use the steamed muthias.


2) Pressure cook the veggies

Pressure cook the potatoes, sweet potatoes, purple yam, banana, pavta, turiche dhane & pavta for 1 whistle in the pressure cooker. (Add 1 cup of water)


Tip: Certain vegetables can only be found in the winter months, or may not be available at your local grocery store - feel free to substitute any vegetables with the veggies of your choice.


4 Potatoes cut into 1/2" cubes

1 Sweet potato cut into 1/2" cubes

1 Suran - Elephant yam - cut into 1/2 " cubes

3 Medium sized raw bananas cut into 1/2" cubes

4 Small eggplants slit in the middle w/o completely cutting through it

1 Cup val papdi (optional - substitute it with snap peas)

1 Cup surti papdi - Hyacinth Beans (optional)

1 Cup Turiche dhaney - Pigeon Peas (optional - substitute it with any legumes you have in your pantry)

1 Cup green peas


3) Prepare stuffed the #eggplants

Make a stuffing of besan, hing, Coriander, cumin, red -chili powder, goda masala, salt , sugar & stuff it into the slit eggplants & keep aside.


4) Prepare Green chilli & garlic paste

Make a paste of the green chillies and garlic.


Finally you are now ready to start making the #undhiyo :)


Ingredients:

2 Cups grated coconut

1 Cup chopped cilantro

7 Garlic petals

2 tsp Ajwain seeds

4 tsp Goda Masala

1 tsp Red turmeric powder

1 tsp Red chilli powder

2 tsp Coriander powder

2 tsp Jeera powder

1 Cup besan

2 Cups whole wheat flour - 'ata'

1 tsp hing

1 Cup pavta - Lima beans (optional - substitute it with any beans you have in your pantry)

Salt to taste


1) Heat 2 tbs oil In a big pot & add the mustard seeds, hing & ajwain seeds to it. They should plutter

2) Add grated coconut, turmeric powder and saute for 2-3 minutes

3) To this add the eggplants & saute for 5 minutes

4) Add the papdi, 1/2 water and cook for another 3 minutes

5) At this stage add all the vegetables and water as needed and stir all the contents in the pot

6) Add the methi muthias

7) Add all the masalas to the pot - cumin, coriander, goda masala, red chili powder,

8) Add the green chili, ginger garlic paste

9) Stir well and cook on a low flame for about 5 minutes

10) Serve hot with rice or phulkas
