Vegan Beetroot Raita/ Beetroot Salad with curd/ Beetroot Koshimbir

Boiled #beetroot with #creamy plant based yogurt is a hit in our household! Salads with #yogert/ #curd is great way to include more #calcium into your diet. To make the dish #vegan, simply substitute yogurt with plant based yogurt.

Ingredients
2 medium sized beetroots boiled & cut in 1/2” square pieces
1 medium sized onion chopped
4 to 5 green chillies chopped
2 to 3 tsb curd, plant based if preferred
1 tsp coriander chopped
1 tsp salt
1 tsp sugar
Procedure
1) Pressure cook the beetroot in a pressure cooker for 4 whistles
Tip: An alternative to pressure cooking the beets, is steaming them in a steamer.
2) Set aside to cool for a few minutes
3) Peel the beetroot & cut into ½” cubes
4) Take a bowl & mix the beetroot, onions, chillies, coriander, curd, salt & sugar
5) Mix thoroughly
6) Garnish with chopped coriander & Serve
