Beetroot Salad with Onions

Boiled #beetroot with #crunchy onions , #lemon juice and #green#chillies! Need I say more? This dish can be served as a #side or as a #salad. Its very easy to make & a great way to enjoy beets in the #spring or early late #summer & #Fall months!

Ingredients
2 medium sized beetroots boiled & cut in 1/2” square pieces
1 medium sized onion chopped
4 to 5 green chillies chopped
1 tsp lemon juice
1 tsp olive oil
1 tsp coriander chopped
1 tsp salt
1 tsp sugar
Procedure
1) Pressure cook the beetroot in a pressure cooker for 4 whistles
Tip: An alternative to pressure cooking the beets, is steaming them in a steamer.
2) Set aside to cool for a few minutes
3) Peel the beetroot & cut into ½” cubes
4) Take a bowl & mix the beetroot, onions, chillies, lemon juice , coriander, olive oil, salt and sugar
5) Mix thoroughly
6) Garnish with chopped coriander & Serve
